I could not be more excited to team up with Duke’s to share my Pepper Jack Pea Salad – a colorful Spring side perfect for your Easter table.
I didn’t grow up with pea salad – the closest thing we had was 7-layer salad, and I didn’t touch it because, to me, peas were the veggie you spit into your napkin to be disposed of later!
Luckily, peas have grown on me over the years and this salad may be my favorite use yet!
Bright green peas, crispy bacon, spicy pepper jack cheese, and red onion are tossed in a creamy mayo/sour cream dressing flavored with garlic, onion powder, celery seed, and for a little more heat: red pepper flakes.
It could not be easier and all comes together in about 20 minutes. After an hour in the fridge (to allow the flavors to meld) you sprinkle with chives and serve!
It’s such a nice balance of flavors and textures – everyone in the apartment could get enough!
