Keeping with the theme of quick weeknight meals that don’t skimp on flavor, we made these Aleppo-Chicken and Broccolini Grain Bowls for dinner last night!
Using one sheet pan, broccolini is roasted on half while chicken thighs coated in an Aleppo pepper and cumin-infused Greek yogurt are roasted on the other half. The chicken and broccolini are served on a bed of bulgur wheat flavored with the pan dripping and a bit of pickling liquid from the red onion. The final touch is a drizzling of Greek yogurt thinned with olive oil and sprinkled with salt and pepper.
I love that there are four distinct elements to this dish creating a delightful contrast of flavors and textures and it can all be on the table in about 40 minutes.
