Earlier this summer, a friend and I enjoyed lunch at one of my favorite Portland spots: Central Provisions.
While I’ve tried many dishes there, this was my first time experiencing their Baja Fish Sandwich. The sandwich features buttered, grilled bread smeared with lime-avocado aioli and topped with generously seasoned, flaky white fish, pickled onions, and lettuce.
Each perfectly flavored element complements the others, with nothing extraneous.
The result is a mouthwatering sandwich that’s filling yet light. Just a few days after I enjoyed this dish, Skordo launched their Baja spice blend in partnership with Central Provisions. I quickly grabbed the spice package and have been recreating this delicious sandwich at home ever since.
