After a beautiful weekend, yesterday’s cold and rainy weather provided a perfect opportunity to make Dan Pelosi’s cozy Italian Gay Wedding Soup. The simple soup started with a soffritto (onions, carrots, celery, and garlic) combined with a Parmesan rind and chicken broth.
I didn’t have any homemade broth on hand, so I opted for my favorite store-bought alternative: Better Than Bouillon.
Mini chicken sausage meatballs, flavored with oregano, red pepper flakes, and smoked paprika, are dropped into the simmering broth and cooked through.
Then, chopped rainbow chard (hence the pride edition of the recipe) is added and cooked until wilted. To finish it off, the soup is served with a generous sprinkling of Parmesan cheese.
