Jessie Sheehan’s Smash(ish) Burger Hand Pies with Cheese

When I finally had a chance to dive into Jessie Sheehan’s new cookbook, “Salty, Cheesy, Herby, Crispy Snackable Bakes” her Smash(ish) Burger Hand Pies with Cheese immediately caught my eye!

The pie dough is surprisingly simple, using melted butter instead of traditional cold cubes. After rolling the dough into squares and brushing them with mayo, you top six squares with hand-smashed burgers seasoned with salt and pepper and cheddar cheese.

You then cover each with the remaining pastry squares, sealed them, brushed them with egg wash, and baked them until golden.

Jessie suggests serving them with mayo, mustard, or dijon, but more is more right? I mixed all three for the perfect dipping sauce. Absolutely delicious
