I am entering my Seafood Era (only fitting now that we live in Maine) and using Ari Kolender’s How to Cook the Finest Things In the Sea as my guide!
Alex isn’t the biggest fan of oysters … unless they’re broiled, so I kicked things off with these Char-Broiled Oysters with Garlic Butter and Parmesan!
I grabbed a dozen and got shucking – only slipping once and slicing my finger on the shell – better than stabbing my hand with the shucker I guess…
The oysters are nestled into a pan of kosher salt, which keeps them level under the broiler and makes for a great presentation! Each one is topped with a compound butter made with Worcestershire sauce, garlic, lemon juice, and parsley, then finished with a generous sprinkle of Parmesan.
A quick blast under the broiler until bubbling and golden, a final splash of lemon juice – and that’s it. So much deliciousness in a half shell. 🦪
