The trees are budding, the flowers are blooming – spring has arrived … just not in Maine. We’ve still got bare branches and a chance of snow today.
So we’re making our own version of spring with Gregory Gourdet’s Creamy Asparagus Salad with Sunflower Seed Furikake.
Crisp asparagus, avocado, and cucumber get tossed in a gingery dressing built on puréed sesame and sunflower seeds. It’s rich, a little spicy, and a welcome break from your usual vinaigrette. Sharp quick-pickled red onions cut through it, while a punchy furikake of nori, garlic, sesame, sunflower seeds, and dried chiles adds crunch and heat.
Spring on a plate … even if it’s snowing outside!
