While I’m savoring every minute of the waning weeks of summer, I can’t help but get excited for my favorite time of year. Fall not only has the weather perfect, but the foods are some of my favorites. It’s also when I can start hosting more diners and brunches because the apartment won’t be 1000 degrees after using the oven!
I mentioned yesterday that I was trying to eat more in-season but I couldn’t resist getting a little preview of Fall with one of a favorite things: roasted butternut squash. I usually keep things pretty simple when making it (salt, pepper and olive oil), but I also love a more decadent version like this. With the melted butter and brown sugar this feel more like a dessert than a side dish!
Now I just need to decide if I’ll make this or pancetta/sage butternut squash for Thanksgiving!
