413. Chicken Noodle Soup

I remember warming up on a cold day with a big bowl of my mom’s homemade chicken noodle soup — it was delicious, comforting and felt like home in food form.  With such fond memories of this, I’m surprised that it took me 32 years to finally make my own.

If I realized how easy it is, I would have been making it all along! And this was especially easy because I had two quarts of Ina’s homemade chicken stock in the freezer. You simply roast and cut up the chicken breast; bring the stock to a simmer; add the carrots, celery and noodle, simmer for 10 minutes, then add the parsley and chicken. That’s it!!!

You’re left with a big pot of warm deliciousness to curl up on the couch with.
