Ina has an undeserved reputation for calorie-rich, fatty recipes. While there are plenty of those, she also has a ton of healthy fare — on the whole, it’s fairly balanced.
That being said, two years into my Ina-only diet I feel like I’ve begun running low on green veggie options from her books. One of my favorite vegetables is broccolini, and I’m sad to say this is the last of Ina’s to try. Turns out I saved the best for last!
All of Ina’s broccolini recipes are simple and delicious. You’re usually tossing them with olive oil, salt, and pepper then sauteing or roasting. For the recipe, she boils them, but I chose to blanch them to maintain the bright color.
Once drained, you moisten them with the Dijon, balsamic vinaigrette, squeeze fresh lemon juice and sprinkle with salt.
I couldn’t stop picking at them while the rest of the dinner was finishing!
