I enjoy a Caesar salad, but I adore a massaged Kale Caesar Salad and knew I couldn’t go wrong with J. Kenji Lopez-Alt’s version from Serious Eats.
The chopped kale massaged in oil leads to wilted, tender leaves that are coated in a straightforward Caesar dressing that skips the raw egg yolk and uses mayo to give the dressing body – it’s rounded out with anchovies, garlic, Parmesan cheese, Worcestershire sauce, and lemon juice.
The salad is topped with small croutons (ensuring a crunch in every bite), thinly sliced shallots, and a generous sprinkling of Parmesan!
One thing I really love is that the hearty kale holds its own for days making leftovers just as delicious as freshly made.
