One of the New York restaurants I’ll miss the most is Win Son … luckily I have their cookbook to make some of my favorite dishes until I’m back in the city.
One of the best is their refreshing and very simple Marinated Cucumber with Fried Shallots!
Peeled cucumbers are cut into quarters and then marinated in garlic, salt, toasted sesame oil, and MSG. Just before serving you top with a healthy amount of cilantro and fried shallots.
It’s a delightful contrast of flavors and textures – with the crisp cucumber and crunchy shallots brought together by the simple umami-rich sauce.
