Growing up, I loved cauliflower, but in my 20s I was turned off by its drag performances masquerading as things like steak and pizza crust. After all, it was a particularly bad cauliflower alfredo sauce that led me to ditch the online recipes and teach myself how to cook through Ina!
Fortunately, I’ve rediscovered my love for cauliflower through simple recipes that let it shine, like Millie Peartree‘s Blackened Cauliflower!
This dish involves tossing cauliflower florets in a flavorful mixture of smoked paprika, onion and garlic powder, red pepper flakes, thyme, black pepper, and sumac, then roasting them in a very hot oven until tender and nicely browned.
It’s a flavor-packed, slightly spicy side that pairs well with almost any main dish! Millie says the sumac is optional but I love the citrusy kick it provides for the dish!
