Although reading Julia Child’s “My Life in France” sparked my passion for cooking, I can only count on one hand the number of Julia recipes I’ve actually made.
So, to commemorate the 6th anniversary of unexpectedly meeting Ina in Paris (are you tired of hearing about it yet?), I decided to dust off my copy of “Mastering the Art of French Cooking” and whip up her Blueberry Clafouti!
Years ago, my friend Annie introduced me to clafoutis during one of her epic brunches, and I’ve been hooked on these pancake-like, slightly sweet desserts with fruit ever since.
Julia’s version is the largest I’ve ever made starting by heating a portion of the batter in the dish on the stovetop to create a sturdy base. Three cups of blueberries are then layered on top, followed by the remaining batter and a sprinkle of sugar before baking in the oven until it puffs up impressively and cooks through.
Once out of the oven, it’s dusted with powdered sugar and served. While it’s delicious warm with a scoop of ice cream, I personally prefer it chilled straight from the fridge!
