Sarah Leah Chase’s Scalloped Tomatoes

If you’re a fan of Ina, you’re likely very familiar with her friend and inspiration, Sarah Leah Chase – who has a number of popular cookbooks of her own along with having several recipes, like Orzo with Roasted Vegetables and Tri-Berry Muffins, featured in Ina’s cookbooks!

Ina often mentions Sarah’s “Cold Weather Cooking” as one of her favorite cookbooks and I finally picked it up! And the first recipe I made was absolutely stellar: Scalloped Tomatoes!

Roasting is my favorite way to enjoy a non-peak-season tomato. For this simple dish, bread cubes are toasted in bacon fat before being combined with diced tomatoes, a little sugar, garlic, and basil, then topped with parmesan cheese, and baked until golden and bubbly.

The Food52 adaptation says you can swap out the bacon fat for olive oil, but IMHO, unless you’re vegetarian, the bacon fat takes this to the next level imbuing the dish with a smoky meatiness that’s perfection.

Any other favorites from “Cold Weather Cooking” I should try?
