Right after moving to Maine, I was told we had to try Morse Sauerkraut. I picked up a jar the first week I was here, but it lingered in the fridge until I happened upon Rachel Gurjar’s Sauerkraut and Potato Skillet!

Now I’m in love with both the sauerkraut and this recipe!

It features golden brown potato cubes tossed with onion and garlic, with a smoky heat from generous amounts of smoked paprika and cayenne.

The sauerkraut adds a nice acidity that brightens the dish, and eggs, cooked until jammy like in shakshuka, make it a complete meal!
