Lidey Heuck’s Grilled Skirt Steak with Romesco Salsa

If you’re looking for a last-minute dinner idea to make this Father’s Day special, may I recommend Lidey Heuck‘s Grilled Skirt Steak with Romesco Salsa! Although this does require a marinade time so it will be just as delicious as a treat for yourself next week, too…

We used flank as the store didn’t have skirt steak and marinated it in red wine vinegar, garlic, brown sugar, cayenne, and salt and pepper, then seared until medium-rare perfection.

Lidey originally made this on the grill but we used a cast iron  on the stovetop.

For the romesco salsa, you’ll need olive oil, almonds, cherry tomatoes, roasted red peppers, red wine vinegar, parsley, garlic and smoked paprika – which recently has become my new favorite spice! The salsa is a bright, acidic, and tasty companion for the juicy steak!
