When I first moved to New York and wasn’t making much money, I lived off the halal carts dotting the city – always getting the mix of beef and chicken with plenty of white sauce!
Over the years, I didn’t frequent the carts as much, but they always held a special place in my heart. Of course, now that it’s not readily available for me in Portland, I’ve been craving it more than ever!
Luckily, there’s Zaynab Issa’s twist on this street-food favorite, Halal Cart Chicken Salad, which will satisfy that itch until I’m back in the city.
Zaynab turns up the volume on rotisserie chicken with coriander, cumin, oregano, and turmeric bloomed in olive oil and mixed with garlic and lemon juice. To build the salad, the chicken is layered with iceberg lettuce, red onion, tomatoes, and pita chips.
The white sauce is always my favorite and is the perfect dressing to pull the salad together!
It’s a low-effort, high-reward summer salad!
