Dan Pelosi’s Chicken Pesto Meatballs

Like our mutual queen (Ina), Dan Pelosi knows his way around making a simple recipe that doesn’t skip on flavor!

One of his latest for The New York Times, Chicken Pesto Meatballs,  is incredibly easy to make, especially since store-bought pesto is fine!

This dish is an ideal, flavor-packed dinner for busy weeknights. Just mix pesto with panko, an egg, red pepper flakes, ground chicken, and Parmesan, then bake!

While you could serve these with a sauce, we simply put a bowl between us and snacked on them while catching up on the latest season of Hacks!

Delicious! I would cut back on the salt also to 1/2 tsp. I did broil after the 10 min. for about 2 min to add some color. Will make this again for sure.
