With this week’s heatwave, if you’re like me you were on the lookout for any recipe that didn’t require turning on your oven!

It was the perfect time to team up with my friends (and fellow New Englanders) Cabot Creamery to make Ina’s Spicy Roasted Red Pepper Pimento Cheese!

This no-cook appetizer will satisfy your tastebuds with its rich, creamy, spicy deliciousness – whether served with crackers or veggies. The key, of course, is to use *goood* cheddar and that can only mean Cabot’s Vermont Cheddar!

If you have any leftovers (and dare to turn on your stovetop), I highly recommend slathering this on sourdough bread, topping with slices of tomato and making mouthwatering grilled pimento cheese sandwiches.

Thanks again for teaming up, Cabot! Can’t wait to make that quick road trip to Vermont to visit the mothership.
