Central Provisions’ Ras el Hanout Cauliflower

One of my favorite restaurants in our new hometown is Central Provisions – it never disappoints! So I was thrilled to see them team up with another local favorite Skordo for a new line of spices to recreate some of their iconic dishes at home!

The first I attempted was one that I’ve had and loved at the restaurant: Ras el Hanout Cauliflower! Roasted cauliflower and chickpeas are tossed in a ras el hanout dressing.

For those unfamiliar, ras el hanout is a North African spice blend that translates to “head of the shop” in Arabic, indicating it showcases the best spices a store has to offer. Each blend is unique, with flavors that can vary widely depending on the spices used. The Skordo version of this blend includes 11 spices, such as Aleppo pepper, cardamom, and fenugreek, creating a rich and complex mix to turn up the volume on any number of dishes.

The cauliflower is topped with a mint, parsley, and apple salad dressed with lemon, olive oil, salt and pepper.

It’s a complexly favored dish that’s sure to be added to our regular rotation!
