Tomato Sandwich Week, Day 3: Smitten Kitchen’s Tomato and Fried Provolone Sandwich.
I’m a tomato sandwich purist at heart. Give me toasted bread, a slather of mayo (flavored or not), some salt-kissed tomatoes, and a sprinkle of herbs or spices, and I’m in heaven. Sure, I love the addition of avocado or bacon, but that turns them into a wholly different thing, IMHO.
But how could I pass up the idea of dreamy fried provolone?
This version, inspired by one on Food 52, features a quality slab of sourdough bread smeared with mayo, topped with beautifully golden-brown pan-fried provolone slices and plump, juicy tomatoes.
I worried about flipping the cheese, but it proved easier than expected. However, either the quality of my provolone or my overzealous frying skills led to a chewier texture than I’d prefer, though the flavors were wonderful.
Next time, though? I’m definitely giving that bread a good toasting. Because I can’t get enough of that crunch!
