Tomato Sandwich Week, Day 4: Savoring Eric Kim’s Furikake Tomato Sandwich last summer inspired me to plan this week honoring my favorite August meal!
Eric enhances the traditional recipe with furikake, a Japanese umami-packed seasoning made of toasted sesame seeds, nori (seaweed), and salt. I’ve discovered a new favorite furikake brand: Ajishima’s Nori Komi Furikake.
Eric goes the toasted route for the bread (as you know, my preference) spreads it with gooood mayo, sprinkles on the furikake, and tops it with thick slices of salted heirloom tomatoes.
As Eric mentions the seasoning amplifies the tomato flavor making this one of the most tomato-y sandwiches I’ve had.
I LOVED the toasted sesame seeds in this version!
