I’m counting down to Ina’s memoir release by sharing one favorite recipe daily from each of her 13 cookbooks! We are one week closer to the release, and with How Easy Is That, we’re halfway through Ina’s cookbook repertoire!

I couldn’t compile a favorite recipe list without including at least one roast chicken recipe (I don’t want to upset Jeffrey), and Jeffrey’s Roast Chicken, also known as Engagement Chicken, may be Ina’s most famous version—it did play a role in bringing Prince Harry and Meghan together after all.

While this wasn’t the chicken dish that won over my husband (we can thank Chicken Thighs with Creamy Mustard Sauce for that), it’s still an absolute favorite.

The joy of this roast chicken recipe lies in its simplicity, perfectly encapsulating Ina’s cooking ethos: simple, quality ingredients combined with proper technique for homey, comforting, and delicious results!

Ina stuffs the bird with lemon and garlic, sprinkles it with salt and pepper, and surrounds it with onions and lemon wedges. Over an hour in a very hot oven produces tender chicken with divinely crispy, golden skin. After removing it from the oven, you carve the chicken and add wine and chicken stock to the roasting pan for a phenomenal pan sauce to drizzle over the meat.

Just writing about this makes me want to rush back to the kitchen and make it again!
