Day 4 of conference rooms and hotel food – I’m ready to get back to Maine and cook up some homemade fall treats like Lidey Heuck’s Maine Pumpkin Buckle, a dessert that pays homage to her time at Bowdoin College in Brunswick, Maine – about 30 minutes north of where we live.

The recipe draws inspiration from two beloved pumpkin desserts she discovered in her college dining hall.

This New England-style buckle features a moist pumpkin sponge sweetened with maple syrup and warmed with classic fall spices – cinnamon, ginger, nutmeg, and cloves. 

A rich cream cheese mixture is swirled top top of the batter  and finally finished with a brown sugar-cinnamon crumble.

Baked then sliced, you are rewarded with a divine layers Fall dessert.
