This vibrant soup combines traditional Italian minestrone ingredients – onions, carrots, bell peppers, celery ,and tomatoes – with chickpeas and North African harissa (a spicy red pepper paste).
The fiery broth is ladled over pearled couscous and finished with fresh parsley and a bright splash of lime juice.
