This fall, my friend recommended Carina Wolff’s Sweet Potato & Halloumi Chopped Salad, and I’ve been dying to make it ever since! Give me seared halloumi all day, every day!
The salad combines roasted chickpeas and sweet potatoes seasoned with onion salt and smoked paprika, then mixes them with raw shaved Brussels sprouts, chopped apples, red onion, and seared halloumi. A hot honey Dijon vinaigrette ties everything together.
It’s a chopped salad that dreams are made of!
While editing this video, I did realize that I forgot to add the apple … I am sure it’s a tasty addition!
