I love a simple dish like Eric Kim’s Mountain Kalbitang with All the Herbs, which requires no skill, just a little patience and time to allow all the ingredients to do their magic.
After several hours of gentle simmering, you are rewarded with a rich stock, but rather than straining out the ingredients, you have a complete, warming, and delicious meal.
Those magic ingredients include bone-in beef short ribs, onion, garlic, scallions, dasima (dried kelp), and Korean radish.
The results are supremely tender meat, tasty radish “steaks,” and a comforting broth.
A generous pile of fresh mint and cilantro leaves provides a bright, herbaceous contrast to the soup’s earthiness.
