Millie Peartree’s Cajun Shrimp Bowl

A couple of weeks ago, Millie Peartree shared this Cajun Shrimp Bowl on Food52, and I immediately stopped what I was doing and ran out to get the ingredients! It turned out to be an easy weeknight meal that perfectly marries flavors and textures—easily one of my favorite dishes I’ve made in a while!

The pan-seared shrimp are coated in a sweet & spicy butter-honey sauce seasoned with cumin, cayenne, chili powder, smoked paprika, and thyme. The sweet heat is tempered by cool, crunchy cucumbers in a yogurt-dill sauce. All of this is served on a bed of heavenly garlic-coconut rice with scallions. Why haven’t I been making my rice with coconut milk?!

This was an instant add to the regular rotation—but I’m not surprised, as Millie can do no wrong!
