I’m all about a simple tartine for dinner—especially when neither of us feels like spending all evening in the kitchen. As with so many of Eric Kim’s recipes, his Three Dinner Toasts are wonderfully simple yet packed with flavor.

🥖 Gochujang-Buttered Radish Toast
This one might have been my favorite. Eric takes the classic French combo of butter and radish and turns up the volume. Sourdough bread gets slathered with sweet-and-spicy gochujang butter and topped with quick-pickled, thinly sliced radishes. Crunchy, creamy, and bright.

🍳 Soft-Scrambled Egg Toast
I wasn’t sure how I’d feel about adding a bit of sugar to scrambled eggs—but it totally works! The pillowy eggs are spooned over toast and topped with chopped chives for a cozy, subtly sweet twist.

🥑 Roasted-Seaweed Avocado Toast
His take on the ever-popular avo toast brings an umami punch thanks to crushed gim (Korean roasted seaweed) and a drizzle of toasted sesame oil. A simple upgrade that makes a big difference.

And while each of these toasts shines on its own, I can confirm: piling all three toppings onto one super-toast? Also very delicious.
