I could not be more excited for the release of The Wishbone Kitchen Cookbook – happy pub Day, Meredith! My copy arrived yesterday, and when I tell you I RAN out to grab the ingredients for her PHENOMENAL Blueberry BBQ Grilled Chicken Salad … I mean it.
The “blue” BBQ sauce strikes the perfect balance of sweet (blueberry jam), heat (cayenne + smoked red pepper flakes), and tangy acid (apple cider vinegar). I don’t have a grill at the apartment, so my grill pan had to do – searing the chicken breast then turning and basting until nice and caramelized.
The chicken is then tossed with greens and radicchio, creamy goat cheese, fresh blueberries, sunflower seeds, and an extra punch of blueberry flavor thanks to a vinaigrette made with more jam, shallots, and cider vinegar.
It’s a hearty salad that won’t leave you hungry … I’ll be campaigning to make this the official state salad of Maine. With all those blueberries, how could they possibly say no?!
