Avocado toast is so ubiquitous at this point, I’m honestly surprised McDonald’s hasn’t added it to their breakfast menu.
And sure, there’s the laughable claim that millennials can’t afford houses because we’re spending all our money on $22 avocado toast and iced oat milk lattes. But honestly? Keep the house – just hand over the smashed avocados.
One of my favorite takes is Smitten Kitchen’s Avocado Tartine with Cucumber and Sesame Seeds. A toasted baguette gets topped with sliced avocado, then a quick cucumber salad dressed in sesame oil and rice vinegar. A final sprinkle of sesame seeds (black ones are a must, IMO as they really pop against the green) finishes it off.
It’s simple, satisfying, and a complete meal in itself – especially perfect for summer scorchers or days when you can be bothered to cook.
