When Alex’s coworker sent him home with some zucchini last week, I knew exactly what was going on the menu: Julia Turshen’s Peppery Zucchini with Whipped Feta – one of our go-to recipes from her book What Goes with What.
It’s a deceptively simple summer side that delivers big flavor. THe key is blooming a generous amount of freshly ground black pepper in olive oil which infuses the oil with a warm, floral heat. The zucchini gets sautéed in that spiced oil until tender and deeply golden, then served over a bed of airy whipped feta (just feta blended with a splash of buttermilk).
It strikes that minimal effort, high reward I am always looking for! Highly recommend it if you’ve got a pile of zucchini and no plans.
