Earlier this year,  I made Marcella Hazan’s Diplomatico – a heavenly molded dessert that wraps  chocolate mousse in rum-soaked pound cake all covered in billowy whipped cream and dotted with fresh berries. Marcella even goes easy on us – encouraging the use of store-bought pound cake. 

My only problem was actually finding a store-bought version! Luckily, Sohla’s Go-To Vanilla Pound Cake saved the day! It’s made with simple pantry staples, bakes up with a moist, tender crumb, and has just the right tang from sour cream to balance the sweetness. 

Like my favorite kind of cookie – shortbread – it’s that simple, buttery perfection I can’t get enough of. Even better when it’s soaked in rum and paired with chocolate mousse
