Just read the short list of ingredients in Ina’s Cape Cod Chopped Salad, you’ll know why it’s one of my all-time favorites of hers.
The perfect forkful is one where you get a bit of smoky bacon, sweet-tart apples and dried cranberries, creamy blue cheese, crunchy walnuts, and peppery arugula.
They balance each other perfectly: richness from the bacon and cheese, sweetness from the cranberries and maple in the dressing, acid from the cider vinegar and orange juice.
Looking at my early captions and they were short and sweet: “Cape Cod Chopped Salad – can’t go wrong with a half pound of bacon!” But past me wasn’t wrong. That half pound of bacon does a lot of heavy lifting here, turning what could’ve been a nice side salad into something that actually feels like lunch.
