How to Make Pie-Iron Pizza at Home (No Campfire Required)

Growing up, it wasn’t officially summer until we had Pie-Iron Pizza cooked over a campfire on a camping trip.

It’s simplicity at its best: marinara, mozzarella, and pepperoni sandwiched between two slices of buttered white bread, secured in a pie iron, and cooked over the fire until golden brown with melty cheese inside.

For years, living in New York with no campfires in sight, I could only dream of making them. Sure, I could have used a panini press or a skillet, but it’s not the same!

Then I saw @jamesyworld using a stovetop pie iron (this is the one I bought) with a shorter handle, immediately bought one, and we were suddenly making these on the regular.

Sadly, it’s not nearly as fun on an electric stove, so Portland friends with gas stoves: I’ll bring everything we need for Pie-Iron Pizza. I’ll even come prepared with scary campfire stories, like “Johnny, I Want My Liver.” IYKYK.

Stovetop Arrabiata Pie Iron Pizzas

(No Ratings Yet)

  • Author: Trent
  • Total Time: 15 minutes
  • Yield: 1 pie iron pizza 1x

Ingredients

Scale
  • 2 tablespoons salted butter, at room temperature
  • 2 slices white bread
  • 4 tablespoons Arrabbiata sauce, preferably Rao’s, plus more for dipping
  • Crushed red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese, divided
  • 6 to 9 pepperoni slices

Instructions

  1. Spread 1 tablespoon salted butter on one side of 2 slices white bread. Flip over and spread 2 tablespoons of arrabbiata sauce on each slice, then sprinkle with crushed red pepper flakes (if using).
  2. Place one slice, buttered side down, in the pie iron. Top with 1/4 cup shredded mozzarella cheese, your desired number of pepperoni, and then the other 1/4 cup shredded mozzarella cheese.
  3. Place the second slice of bread on top, buttered side up. Close and latch the pie iron.
  4. Place pie iron on a stovetop burner over medium heat. After two minutes, flip and open to check doneness. If golden brown, close and latch and cook the other side of the sandwich for another 2 minutes.
  5. Unlatch and open to check on sandwich, it should be golden brown with the cheese thoroughly melted. If not continue cooking, checking every 30 seconds, until done.
  6. Serve immediately. I sometimes warm the extra arrabbiata sauce to dip the sandwich in!
