359. Arugula, Radicchio, and Parmesan Salad

When I’m hosting a dinner at my apartment, I try to make as much as possible ahead of time or select recipes that don’t require me spending the entire time in the kitchen. Ina’s Arugula Salad with lemon vinaigrette has been my go-to for a simple first course. You can prep the vinaigrette, then all you have to do is dress the salad and shave the Parmesan prior to serving. I’m excited to have this updated version, adding radicchio and endive. It’s a simple change, but adds nice color and texture to the salad.
