These muffins are to die for!!! I’ve never been a huge bran muffin fan — wheat bran always reminds me of sawdust. And who really wants a healthy muffin?!?! It my excuse to eat dessert for breakfast.
But with Ina’s promise of a moist and tasty version, I had to give it a shot. And thank God I did! These are my new favorite muffins. The yogurt keeps them moist and the honey/sugar combo give the perfect sweetness … and who doesn’t love blueberry stuffed baked goods.
My only word of warning (and I’m not sure why I still haven’t learned): refrigerate these if you’re not planning on eating within 24 hours. I left mine on the counter for several days in 80 degree weather and the last one made me want to vomit. Ha!
