After settling on Clam Chowder for brunch this past weekend, I decided a salad would be the perfect second course. I absolutely love a baked brie, but always skipped this recipe because I wasn’t sure if I’d be able to find mâche. While it took trips to several stores, I was finally able to find it at Whole Foods. And THANK GOD because this recipe may be my new obsession!
The flavor combinations are simple, but add up to utter deliciousness – the mache is dressed with syrupy balsamic vinegar and olive oil, the brie drizzled with honey and pistachios, the baguette toasted, and the apple thinly sliced
I under-baked the brie a little bit because I was nervous it’d turn into a pool in the oven, but it was still wonderful. And if you can’t find mache, arugula would be a delicious substitute.
Next time, I’m turning these into appetizers for a cocktail party!
