392. Fresh Peach Cake

While everyone seems to be lamenting the fact that summer weather is coming to an end,  I’m thrilled that I can bake again in our apartment without turning it into a Bikram yoga studio!

To kick off the Fall baking, I decided to go with Ina’s Fresh Peach Cake while I could still get quality local peaches. I’d been dreaming about this since @iwakeibakebread asked me if I had any plans to try this a couple weeks ago.

In order to make this, you have to do one of my least favorite things: peel a peach. (It’s not that it’s hard, I just hate that you have to boil water to do it haha) Once the batter is made, you pour half of it in a 9-inch square baking pan, top it with a layer of peaches and two-thirds of sugar/cinnamon mixture, then repeat.

It’s an absolutely delicious cake and even better the next day after the cinnamon and sugar have had a chance to seep in!
