  1. It’s been my experience with dishes such as this and Shakshouka, that by the time the eggs whites are cooked, the yolks are cooked too much. I dislike runny whites, but prioritize runny yolks, so am often disappointed. What was your experience?

    • Hi Andrea! It’s always hit and miss for me – for these the whites were firm and the yolks pretty runny (a little firm on the underside). Honestly next time I may just make the sauce and serve a crisp-edged fried egg on top!

  2. I thought I had all the Barefoot Contessa’s Cookbooks, but could not find this recipe in any of them, and specifically in ” How easy is that?” Is there something I am missing?
