I am slowly learning to love tofu (thanks, in part, to everyone who sent me their favorite tofu-based dishes).
One of my new favorites is Ali Slagle’s Green Curry Glazed Tofu – I love the trick of cooking the tofu with a bit of the Thai green curry and coconut sauce allowing the sauce to absorb into the tofu before adding oil and browning on all sides.
A store-bought curry paste makes this a quick, easy, and flavor-packed weeknight meal – I typically go with Maesri brand.
You can make this with any preferred veggies, but we went with asparagus, sugar snap peas, and corn which is charred and then mixed with the remaining curry/coconut sauce and tofu and warmed.
To cap off the meal, you splash it with lime juice and serve it over a bed of rice to absorb all that delicious sauce
