James Park’s Sesame-Crusted Gochugaru Shortbread Cookies

Back in 2022, I was lucky enough to have the opportunity to test several recipes for James Park’s Chili Crisp cookbook and my absolute favorite was his inventive Sesame-Crusted Gochugaru Shortbread Cookies!

Shortbread is one of my favorite types of cookies and this was unlike any I’d had before.  To incorporate chili crisps into his desserts, James developed a pared-down Very Nutty Chili Crisp that skips things like garlic and scallions that might not marry with sweets.

The buttery cookies are flavored with this version of chili crisp, gochugaru (Korean chili powder), and a hint of rosemary. The dough is formed into logs, rolled in black and white sesame seeds, then chilled before slicing and baking.

Not only are they beautiful crackers, but the perfect balance of sweetness, savory notes, spiciness, and herbal flavors. I love having a roll of this dough in the freezer for wherever the craving strikes!
