Like Jeffrey, I’ve learned to love roast chicken in nearly any form – even better when it’s a one-pot meal like Dan Pelosi’s Piri Piri Roast Chicken!
Potatoes and broccoli rabe are layered in a Dutch oven with some chicken stock and white wine, topped with a full chicken that’s been rubbed with piri piri seasoning (if you can’t find it, don’t worry – Dan provides a recipe using common spices) and some lemon. Roasted for a little over an hour, and your full dinner is ready!
The chicken was perfectly seasoned and tender – with a nice kick from the cayenne in the piri piri seasoning. The potatoes are divine – absorbing the flavors from the broccoli rabe, lemon, and chicken drippings.
It’s such a delicious and effortless meal!
