Derek Lucci’s Makheua Yao Pad Tao Jiao (Stir-Fried Eggplant With Minced Pork) is a new favorite dish in our apartment – we’ve made it three times in the last month alone!
Japanese eggplants are cut, tossed with cornstarch and quickly fried until tender on the inside with crispy edges.
The eggplant is tossed with minced pork, chopped garlic, and Thai chilies all slicked with a stir-fry sauce composed of fermented soybean pasta, oyster and soy sauce, vinegar, and a little sugar for sweetness.
Off the heat, Thai basil is added and served. It’s a quick meal packed with so much satisfying flavor.
