On today’s adventure in farro-is-my-favorite-grain-and-I-refuse-to-shut-up-about-it we’re making Smitten Kitchen’s divine and simple One-Pan Farro with Tomatoes!

I’ve waxed poetic about my love of farro – its chewiness, satisfying heartiness, and the fact that it absorbs the flavor of whatever you are cooking it with are just a few of the things that keep me coming back for more.

And Deb takes pity on our hectic weeknight schedules by cooking the farro with almost all the ingredients – water, onion, garlic, tomatoes, and red pepper flakes – for 30 minutes and viola! 

A sprinkling of basil and parmesan completes the dish for such a satisfying weeknight meal with little to no effort!
