In New York, finding live lobster was never the easiest – and I’m not sure if live lobster ON SALE was ever a thing!

So, when I saw local-caught lobster on sale for $7.99 a pound in Portland last week I snatched up several and set my eyes on making Jasper White’s World Famous Lobster Rolls!

This was the first time I steamed a lobster rather than boiling and we loved the tender results.

The lobster is tossed with a homemade tarragon mayonnaise, diced cucumber(!) rather than celery for crunch, and sliced scallions before being piled in top-split buttered and toasted  bun, making for one delicious feast.

I usually struggle making my own mayo, but the trick of adding ice water is a genius way to prevent the mayo from separating. And the cucumber was a refreshing addition!

I know we’ll be making these again soon – once I build up the courage to kill more lobster.

People always say you weren’t a New York until you lived in the city for 10 years, how many lobsters do I have to kill before I get my Mainer card? Although I prefer to be called a Maine-iac. 😂
