Last spring, I asked for your favorite rhubarb recipes, and you all delivered! Among the cobblers, pies, and dessert bars I was most intrigued by this Strawberry-Rhubarb Mojito – a twist on the classic rum cocktail, using rhubarb and strawberry simple syrup, white rum, lime juice, and 7UP.
Jeanine shared the recipe which was created by her friend, Gina! I only made one change, thanks to Jeanine’s suggestion: I swapped out the 7UP for seltzer, as I’m not a fan of overly sweet drinks.
A little mint muddled in the cocktail shaker adds a nice hint of flavor but is thankfully strained out—I’ve always disliked chunks of mint in a mojito!
