I’ve been meaning to make Colu Henry’s A Dirty Bird (aka Potato Chip Chicken) since @jamesiseating posted about it months ago, and it was worth the wait!

It was reminiscent of the divine Wheaties chicken my grandma made when I was growing up.

For Colu’s version, you crush kettle-cooked barbecue chips and mix with smoked paprika, brown sugar, and butter. The bird is then thickly coated in the mixture before roasting until the coating is crisp and the chicken is tender.

The smokey, sweet & salty, crunchy coating combined with the tender, moist chicken are what dreams are made of!

Even better is the coating that falls onto the pan and bakes in the chicken fat (just like Grandma’s chicken). It’s the chef’s reward for making dinner!
