1355. Danny Meyer’s Orecchiette with Broccoli Rabe and Sausage

On the latest season of “Be My Guest,” Ina hosted restaurateur Danny Meyer who shared his recipe for Orecchiette with Broccoli Rabe and Sausage!

While his take on this classic pasta dish tasted fantastic, getting there was a bit of an adventure. The jury is still out on whether @foodnetwork watched the episode prior to typing up the recipe – the ingredient amounts and instructions vary somewhat confoundingly from what was shown on the episode.

Keep in mind this is for a pound of pasta: Food Network’s recipe lists 1.5 cups of olive oil (likely should be ½ cup), 2 pounds of cheese (closer to 2 cups, plus extra for serving), and uses regular water instead of pasta water.

Additionally, the order of instructions differs, such as when to deglaze and add garlic, and the preparation sequence for the broccoli rabe.

One tip from the episode I’d skip is mixing the cheese and pasta in the colander—it’s a pain to clean IMHO.

So TLDR: if the version on Food Network reflected Danny’s recipe I’d recommend, but until the online recipe is fixed, skip this one. There are plenty of fabulous versions of this dish out there with fewer errors!
